Unquity Hill House (Unquity Oyster House? Swift House? Swift Hat Shop?): A small casual joint influenced local history. Massachusett (Neponset, Ponkapoag) indians meet Governor Hutchinson. Unquity, the Neponset word for the area means "Lower Falls." It was where the Neponset indians spent summers.

Serves contemporary gastro pub food focused on local ingredients. Connected to the past, but also in touch with what Milton locals want to eat. Notes of New American Bistro, gastro pub, Irish pub, Italian trat. Quebecois, french indian cuisines.

Setting is the historic "little red house," Milton's oldest remaining commercial building in the Lower Mills section of Milton/Dorchester. Overlooking the Milton Yacht Club, and in close proximity to the Baker Chocolate Apartments. It will serve the communities of Dorchester and Milton, the latter of which has long been lacking in dining options.

Why residents of Milton should support this project:

This is an opportunity to save an otherwise abandoned part of Milton's history. The Swift Hat Shop is a two hundred year old building, one of the few remaining structures in Lower Mills which existed contemporaneously with the Suffolk Resolves House, then located at the site now occupied by Citizen's Bank. And while Milton has added a some new restaurants in the past few years, it still lacks options. These commercial businesses help offset high property taxes, and bring additional tax revenue to the town.

Food ideas:

Oysters, Newfy Lobsters, Razor Clams, Alewife, Sweat Breads, Deer Sausage, Rabbit, Wild Fowl (squab?). Bird pies. Weird eggs--quail eggs

Braised Veal Breast with macumber turnips, cingale, Gnudi, Beef Cheek Ravioli. Pickled tongue (beef, pig)

Caramelized onion tart

Wild Mushrooms, poached egg

Corn, beans, squash, pumpkins, fruits, nuts, berries.

Indian Pudding

Local cheeses: Great Hill Blue (marion),

Maine Whoopie Pies (katie elliot)
